Umami Flavoured Pastes are in Favour

Great read in today's SMH by Callan Boys, highlighting the growth in condiments and pastes showcasing strong umami flavours. Umami is the 5th taste, a savoury flavour typical of mushrooms, soy, tomatoes and some meats. Foods high in umami have that lovely mouth watering flavour - historically delivered often by MSG, now natural flavours are popular.

You can get your umami fix in several ways: slow fermented miso in "Oomite" (looking dark and thick like Vegemite), chilli sesame and fermented black beans with fried garlic in a crispy chilli oil, a combination of tamari and tahini or "Tumami" a match of tomato paste with black garlic from Alice Zaslavsky. 

​Increasingly customers seem to be turning from highly processed foods and appreciating the clean flavours of real food like Garlicious Grown Black Garlic Paste - pure umami in a jar! Great to restock in June as the free post deal for orders over $100 expires at the end of the month.

A recent Forbes report highlighted the changes in food trends in flavours and spices: in 1950 households were blessed if they had 10 spices in the larder, now most have over 40. Cooking at home and the joys of presenting food on Instagram have focused attention on hard to get spices. Home cooks are seeking out heat (especially pepper), seeds for high nutritional content and visual interest and convenience (think of all those flavour mixes now available).

Fascinating Consumer Reports on Eating Share Trends (CREST) from NPD Group warms our hearts, confirming black garlic is right on trend. Millennials apparently are leading the charge into more healthy eating. Now this is not just low fat or low calories, but a search for clean eating with transparent ingredients. 
"Interestingly, Australian owned and grown is seen as most important to the millennial generation when considering healthy eating (36%), followed by locally grown (31%) and no additives or preservatives (24%)."
In 2017, healthy eating consumption was 14% of food service traffic with $5.8 billion and 644 million visits! This has created a "healthy indulgence" category in food service. Other report highlights were the growth in online meal ordering with order volumes doubling in 5 years.
“Providing easy access to healthier meals made with high quality, local ingredients steering away from ‘low-fat and low calorie’ options are a ‘must have’ for the most health-conscious generation of Australians.  These health-lead, quality assured meals and snacks can no longer be an option in foodservice, but a ‘need-to-have’ offering within the industry,” says Gimantha Jayasinghe, NPD Deputy Managing Director. “Foodservice operators seeking to gain more visits and grow their bottom line should carefully consider their offerings to attract the most health-conscious generation.”
