Fascinating Consumer Reports on Eating Share Trends (CREST) from NPD Group warms our hearts, confirming black garlic is right on trend. Millennials apparently are leading the charge into more healthy eating. Now this is not just low fat or low calories, but a search for clean eating with transparent ingredients.
"Interestingly, Australian owned and grown is seen as most important to the millennial generation when considering healthy eating (36%), followed by locally grown (31%) and no additives or preservatives (24%)."
In 2017, healthy eating consumption was 14% of food service traffic with $5.8 billion and 644 million visits! This has created a "healthy indulgence" category in food service. Other report highlights were the growth in online meal ordering with order volumes doubling in 5 years.
“Providing easy access to healthier meals made with high quality, local ingredients steering away from ‘low-fat and low calorie’ options are a ‘must have’ for the most health-conscious generation of Australians. These health-lead, quality assured meals and snacks can no longer be an option in foodservice, but a ‘need-to-have’ offering within the industry,” says Gimantha Jayasinghe, NPD Deputy Managing Director. “Foodservice operators seeking to gain more visits and grow their bottom line should carefully consider their offerings to attract the most health-conscious generation.”

Rhys Jones PwC Perth Executive Chef has shared his wonderful recipe for black garlic puree with us (thanks Rhys). He shows it served with Pork Belly and Peas at a recent lunch. Rhys is one of our creative chef customers who make the most of beautiful produce.
Black garlic puree
125 gm black garlic flesh
200 gm of fresh peeled pear slices
100 gm of water
4 gm of agar agar
4 gm of sea salt
15 gm of squid ink
10 gm of chardonnay vinegar
Place all ingredients into a sous vide bag and seal then cook on 100c 1 hour.
Then puree in a high powered blender (I use a vita prep).
Set in a plastic container in the fridge for 2-3 hours.
Then blend again adding a little boiling water to adjust the consistency and check seasoning.
