Spain: Aged black garlic protects the heart

Spanish researchers have published findings on the cardiac benefits of black garlic on rat hearts. When subjected to ischaemia, rats taking black garlic extract had a smaller reduction in heart contractility and better vasodilation of their coronary arteries. Not only does it taste good....

Black Garlic & Rosemary Powder Shortbreads

This fabulous canape was served at the President's Medal dinner this week and is kindly shared by Tim Browne. In the photo the shortbread is topped with JBS Riverina Angus sirloin and Jewel Onion jam - yum!

115g salted butter room temperature
85g grated parmesan cheese
160g plain flour
2g cracked black pepper
20ml water
20g black garlic and rosemary powder

Cream butter until creamy. Add the Garlicious® Grown black garlic and rosemary powder, parmesan, pepper, flour and water until it forms a dough. Roll in to logs and set in fridge. Slice into rings and bake in oven at 160C for 8-10 min or until golden.

Black Garlic Butter "Allsort"

You can make this glamorous black garlic butter by simply taking lengthwise slices of of a block of butter and laying black garlic cloves along with centre. Use the butter wrapper to roll the slice around the cloves and firm up in the fridge - slice and voila! you have black garlic allsorts. Perfect on a cob of corn or on steak as it comes off the barbecue - enjoy!

Thanks to Renee and Sara for retailing our black garlic range through their cellar doors and gourmet pantries. Gun Dog Estate has branched out to include cold climate wines in Gundaroo along with their established success at Pokolbin. The Gundaroo operation gets going this coming weekend so make a trip of it and taste some new wines at "The Stables" in Cork St Gundaroo.
