Recent Australian reviews have highlighted the rise of "health consciousness" in terms of a series of health indicators. So what is changing:

• we are smoking less
• we are drinking less alcohol but more cider
• we are participating in more sports
• there has been some containment of the escalating rates of obesity though some 65% of Australians still meet the standards for obesity
• demand for fresh diets and fruit and vegetables is increasing 

In response to this, most health food aisles are growing at twice the rate of retail overall. Customers are seeking less processed foods with expectation of reduced salt and sugar. As a retailer how will you respond?
