Spent a very wet Saturday at the Pyrmont Farmers markets but not all was in vain! Thanks to those stalwart customers who turned out to buy garlic regardless of the weather. We had two new flavours of powdered caramelised black garlic - one ground with lemon myrtle and the other including homegrown rosemary. The lemon myrtle leaves pictured above are ground with the dried black cloves for a wonderfully intense lemon flavour, perfect for lamb or fish. There is no lemon included - it is in the picture to get your taste buds salivating. We buy the lemon myrtle leaves from Bent Shed Produce in Tarago, another small farm based business like our own. They are not grown locally - they are sourced from a warmer climate farm on the NSW north coast and are chemical free. The leaves are from Backhousia citriodora add great piquancy to the garlic. The rosemary is home grown straight out of our garden, dehydrated and ground with our chemical free black garlic. There is no difficulty telling one variety from the other (they smell so gorgeous) and they were very popular at the markets. We tasted them on potato cubes and most people who tasted bought a pot for their Easter roast. Sold out of rosemary but more available now. Both are great flavour additions as we come into winter and have been added to the Garlicious™ Grown website. Enjoy!
