This is a beautiful recipe adapted by Ruth Browne, a great friend and customer. She has adapted Michael Moseley's recipe for ordinary old hummus, by replacing fresh garlic with "6 fat luscious black garlic cloves"! Ruth is convinced it is the new smashed avo replacement. She reports "it is the best hummus I have ever made. Yummy on my toast with poached eggs". Thanks Ruth for agreeing to share.
Ingredients
400g can chick peas, drained and rinsed
3 tbsp lemon juice
4 teasp tahini
6 cloves black garlic
1 tsp ground cumin
pinch salt
3 tbsp water as required
6 tbsp extra virgin olive oil
1 tsp paprika
Method
Blend everything but the paprika in a food processor until creamy. Serve with a sprinkle of paprika and a drizzle of extra virgin olive oil.
